Today I got to see the welcome baskets offered to visitors renting one of the Applecross Trust's holiday properties. I am very grateful I have been able to supply chocolate for a little over a year now and so humbled to be in great company there, with other fabulous local produce!

If someone was to ask precisely how long it takes for me to make a single box of chocolates... I'd have to confess that I haven't got a clue!
This video is not even representative because this is the last box I packed today and I was in some kind of rhythm already. Plus I'd made, unmoulded and sorted the chocolates ahead, had designed, printed and cut labels and menus, all of it was organised and ready to use...
But I needed to remind myself that some days it's a big old job I set for myself!

Here we go, the first bonbons are out of their moulds (I'll spare you my ridiculous at cracking them out on video, I'm yet to master that one!) and I'm a little bit in love !
58% dark chocolate shell, dried apricot, ginger and CRN57° paste, darkmilk praline.
What's not to like?
The next ones are now waiting to be finished to join these in their little boxes! Better get back to it!

I've been offered an amazing opportunity to spread my wings a little bit further than usual and these are the things I'm going to be playing with (among others!). I'll be going a little more intense with the dark chocolate from @velichegourmet and trying out this new to me @cairndistillery whisky... Very excited but I'm also terrified to let down the kind people who are trusting me to come up with the goods, so wish me luck!!!

I finally got my gorgeous @ishudkoko coloured cocoa butter from the kind @sosase_chocolat
It was hard to choose but the teal shimmer and the fuschia seemed very obvious 😅😉🦄
And I had to have the copper luster dust, I'd already purchased bronze, red, pearl blue and silver sparkle and they all are amazing!!!
Now I'm very grateful for the samples and can't believe those 2 were sent, as they literally were next on my list (to keep up with the theme!).

Well, that's a good way to start the day... A little over 300 bonbons unmoulded!
Couple of minor imperfections here and there, but I'm still learning from it all, so... I feel good!

They still need capping but I had a cheeky taste of the filling of these...
And I am in love!
Pure indulgence with a dark chocolate shell and dark chocolate ganache (no cream, so suitable for vegans) and a good dose of the beautiful Slàinte whiskey from @carronrestaurant
These will go in a new selection box, keep an eye out for the other flavours to come!

Ooof, the shine again...
These hens/eggs (the ones that answer, or not, the age old question of which one came first) came out beautifully... They are currently simply made of 54% dark chocolate and nothing else. I might give them a few homemade coffee marshmallows... Happy to reserve if you want, just send a message!!!

I must confess struggling this year as my favourite Easter Market is scheduled too late for me, therefore I won't be having my usual stall. I do have my heart set on a little pop-up event (or 2!) but more details on that soon!

So I hit a wall at the beginning of the year. Always a tricky time for me, but I needed some serious thinking. As grateful as I have been for the use of the Community Hall's kitchen, I was still finding it difficult to juggle and plan ahead, and have stuff in different places. And our family kitchen was not ideal either, small and constantly requiring me to stop and clean away for the many, many meals and snacks children require!
Then my wonderful husband one morning stood at the door of our spare room/occasional guest room/used to be office/mostly hide stuff room and wondered out loud if it could become what I needed...
Turns out, all I needed was a couple of stainless steel benches, the rest I already had. Very pleased with my bargains from Adexa Direct!!!!
Now ready to make more delicious chocolates and confectionery!!!!

I've been meaning to communicate sooner but it does mean opening my social media and getting flooded with Valentine's day content...
As I said in this little reel, it hasn't really worked for me in the past, I've put pressure on myself to come up with a Valentine's offer that I then resented because it kind of flopped.
So this year, I said no.
And I'd like to focus on Easter instead! So keep an eye out for eggs, fleggs, hens and rabbits... ❤️

I'm really good at gauging dimensions but utterly useless at cutting regular pieces and I'd been lusting over guitar cutters ever since my course at the Chocolate Academy... That creation of perfectly uniform sized goodies just appealed to me! But my budget is sooooo far from even entertaining the idea. @thecandypan just fulfilled my wild dream though, look at how perfect this milk chocolate and Baileys fudge is!!!!
So fellow chocolatiers with tiny budget, go for it, I totally recommend it! And for clarity, I saw it mentioned on a social media forum and went and bought it while it was on offer so the shipping cost was somewhat offset by the promotion. But totally worth it!

I may be away from the melters and moulds but chocolate is still very much on my mind and I take all the inspiration in... The medieval market had a wonderful array of spices and I couldn't resist buying my first tonka beans! I feel some very fragrant bark or luscious fillings coming soon!

So, I'm heading off to the motherland with the littles for the summer again. Trying to find a bit of warmth and comfort in other food than chocolate and potato winter dishes!
